Both your choice in assault rifle and Machinegun are made by Belgians. Or atleast people employed by Belgians.

The key to modernising any weapon is covering them in glue and tossing them in a barrel of M1913 rails until they look "Modern" enough.

perhaps he wanted to see how a EU army would shape up? but even then, they would probably use some foreign equipment (such as the Chinook)

my opinion:

Assault rifle: some versions of the g3 or g36, HK416, could be anything, countries are very prestigious about there weapons :P
MBT: Chally 2 or Leopard 2 (probably would be the latter as there more widely used by other European countries)
Infantry carrier: (im assuming you meant 'proper apc', not IFV here) Piranha V (if they ever make it) or something similar, such as the Boxer
Ground attack plane: Eurofighter (it is a multi role fighter after all)
Air superiority fighter: Eurofighter
SMG: MP7 or MP5
Machine Gun: Minimi or GPMG
Transport chopper: Either NH90 or a Merlin
Gunship: either a Apache Longbow, or Eurocopter Tiger

Assault rifle: M16/M4 (Face it: it has much more flexibility than the SA80. The pure amount of attachments, I haven't seen near that many on the SA80. I might be wrong, I haven't researched SA80 additions.)
MBT: M1A2 Abrams. The Challenger is great, but America's influence is too large.
Infantry carrier: --No idea--
Ground attack plane: A-10. Ftw.
Air supiroirity fighter: Eurofighter or F35, whichever is cheaper. This is assuming that they begin soon after this point in time. If this theoretical standardization was a while ago, the F-16/18 might be the choice.
SMG: MP5. Familiarity and popularity. MP7 would be better, but face it, MP5 would make it.
LIGHT Machine Gun: Minimi (or however you spell it, British M249)
HEAVY Machine Gun: M2 Browning .50. Ftw.
Transport chopper: Either Blackhawk or the new Huey. Merlin is too large. It would be used for larger transports, but for quick infantry transport, the US set leads.
Gunship: The Apache. Easily.

Right chaps, you're on thin ice. If there is any e-prick wavery without vaild sources there will be points and the tread will be locked. I know we havent gone there yet, but this is just the sort of thread that devolves into that sort of thing. So be careful.
