SABOT is generally reserved for armor only. However, you can still get kills with it vs. Aircraft/Light Vehicles.
HEAT on the flip side is reserved then for light vehicles/Infantry because of its added damage radius. However, when you're shooting at something with light armor, ala an APC, if you are in a tank you can still shoot it with HEAT rounds and it will do a little less than the same damage as a SABOT round. The APC armor is so weak it doesnt matter what you shoot it with, because it should start flaming right away. This is a great trick for saving your SABOT rounds when you're on Kashan and dont want to waste them all on little APC's driving around all the place. Helos/Planes also can be downed by HEAT rounds.
If I remember right also, it doesnt matter if you shoot a bunker/FB with heat or sabot, because they should go down in one hit.
